“pa” – tsampa dough, basic use of tsampa in Tibetan way

Ingredients 
  • one cup tsampa
  • pinch of salt
  • 4 or more tbsp cold press olive oil
  • salt
  • tibetan tea or black tea, or just water
Directions
Put in the bowl tsampa and add olive oil and little of tea. Start to mix by hand or by spoon and if needed add tea. Make daugh by hands. Good one is not sticky.
As tea you can use common black tea, or pu-er tea, or Japanese roasted bancha or kikucha, or of course Tibetan tea. You can also add some nuts and seeds, that tsampa pa will be as protein bomb.  

Fast and simple soup with pepper and caraway

Ingredients
  • 2 to 3 Tbs Tsampa
  • pinch ground caraway
  • pinch dry or fresh marjoram
  • pinch of salt and pepper
  • olive oil or any other cold press oil
Directions
Put tsampa into a bowl, and add all the ingredients except the oil. Mix well. Add hot water and mix again. Top with olive oil. Dried or fresh herbs, such as chives, coriander etc. can be added, as can other greens.
It is a quickly made, healthy soup, that in winter gives warmth and in summer refreshes. Suitable when travelling, trekking, mountaineering and so on.

Traditional Czech dish – Dill Sauce with Potatoes (vegan ) “Eggs”

For sauce:
  • tsampa about 50 g
  • one bunch fresh dill
  • pinch of ground caraway
  • 200 ml of cream, (can be soya cream)
  • salt
Tofu „eggs“:
  • 200 g soft tofu
  • oil for frying
  • black salt ( can be purchased in Indian or organic food shops)
  • pinch of ground or whole cumin
  • tsp turmeric
Side dish
  • potatoes
  • whole caraway and pepper


Directions
Sauce: (For two portions.)
Reserve some of the dill
Bring 2 cups water of water to the boil and add caraway and dill. Cook 5 mins. Add cream and tsampa and mix well to remove lumps (you can use a blender). Heat through and add salt to taste.Place potatoes and caraway seeds in boiling water and cook until the potatoes are soft
Tofu eggs:
Mash tofu and add ground cumin and turmeric. Mix well. Chilli or pepper can also be added. Sauté in hot oil, or, for less grease, in stock. Remove from heat and add black salt. (Black salt should not be heated).
Sprinkle with the (lightly chopped) remaining dill.
Dill contains, among other things, a lot of vitamin C and iron. This combination is perfect for their absorption. Instead of potatoes you can use whole grain rice, buckwheat, and so on.
Side dish:
Place potatoes and caraway seeds in boiling water and cook until the potatoes are soft.

Substitute for Eggs

Instead an egg you can use one of these:
  • half a mashed banana
  • 1 Tbs of Chia seeds mixed with 3 Tbs of water
  • 1 Tbs crushed/milled flax (linen) seeds mixed with 3 Tbs of water
  • quarter of blended/crushed soft tofu

Refreshing summer drink

Ingredients
  • glass of yogurt (can be soya), milk or buttermilk
  • 2 to 3 Tbs tsampa
  • fresh fruit juice or date syrup or any sweetener
Directions
Mix all the ingredients well, in a shaker or blender, to make a strong and refreshing drink.


Tsampa smoothie

Smoothies 0Ingredients 
  • 2 to 3 Tbs of tsampa
  • half or full glass of rice or any other milk
  • banana
  • handful of fresh or frozen strawberries
Direction
Mix all the ingredients well, in a shaker or blender. More milk can be added. This very refreshing and powerful snack is best drunk immediately after mixing.
