Porridge with fresh cheese and olives

  • 5 Tbs of tsampa
  • fresh cheese (or soya cheese) – preferably non salty
  • pinch of fresh or dried rosemary
  • about 2 tbs pitted, dried black olives
  • pinch of salt, pepper and dried red paprika
  • virgin olive oil
  • water or cup of black tea
  • pinch of pepper
  • fresh chives
Place the tsampa in a bowl. Cut the cheese into small squares and add it and the rosemary to the tsampa. Cover with hot water or tea and mix well. The cheese should melt nicely. Mix in the olive oil, olives, salt and pepper and sprinkle with fresh basil.
